Some others that i've just remembered
A country and western style version of Ace of Spades (not as good as the original but still good)
A whole album of Swing style covers of some rock songs (Oasis, Nirvana etc)
unfortunatly, I don't know who either of the artists who did them are

Nirvana & man Who Sold the World is excellent.
Manics & Suicide is Painless if rather good, the covers on Lipstick Traces aren't bad for the most part (<3 Bright Eyes!), but nothing special in my opinion.
PJ Harvey's Highway 61 Revisited is pretty decent, though while I've heard the original, I'm not particualrly familiar with it so can't really say if it's better or not.
Le Tigre doing I'm So Excited is amusing...not sure if it's good or not though...

One of my favourite songs ever is Boomtown Rats - I don't like mondays. Now in an episode of The West Wing theres a cover of it by Tori Amos which is alot more haunting and is one of the few covers I find myself enjoying as much as the original.
