Wouldn't the programme makers have consulted lawyers about this sort of thing and made sure the contract said nothing explicit about going into space or ensured that they couldn't be sued in some other way? They could probably have got away with putting anything in, the average person who signs up to reality TV shows isn't exactly the type to spend hours picking over the details of a legal agreement, especially not when they think not agreeing to it will prevent them from being able to go into space.
